Quick Tortilla Soup

This a quick and tasty recipe for Tortilla soup.  My Mom shared it with me and I make it all the time.  This soup has a great flavor and you can really personalize it by adding or deleting some of the ingredients.

There is a common Greek soup called Avgolemono which is basically a Chicken & Rice soup with a slight lemon flavor that happens to make normal Chicken & Rice soup pale by comparison (In Greek the “avgo” means egg and the “lemono” is lemon). The only problem is that traditional Avgolemono soup takes hours to prepare and, while the payoff is fantastic, most people just don’t have the time to dedicate to that sort of venture.

Luckily I’ve come up with a suitable alternative which will render 90% of the great taste with 5% of the effort! On top of that, this dish can literally be made in 5 minutes, and will only make one saucepan and one measuring cup dirty! Here is a video demonstrating the soup from beginning to end:

Holiday Sugar Cookies

This recipe has been a favorite Christmas tradition for my family as long as I can remember and I continue to make these every year.

After baking the cookies I gather the family around and we have a great time decorating them. You can bake these cookies for any occasion or holiday. Pair this recipe with my frosting recipe and prepare for the many compliments you’ll receive because they are as yummy as they are pretty!

  • 4 eggs
  • 4 ounces plain yogurt
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon flour
