Here is a fantastic recipe that I found for making homemade marshmallows. Once you’ve had these, you’ll never be able to go back to eating the store bought versions again! In addition to the recipe below, I’ve got two videos to walk you through the process.

Recipe: Marshmallows

Ingredients

  • 1 cup powdered sugar
  • 3.5 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 2 cups sugar
  • 1/2 cup light corn syrup
  • 1/2 cup hot water
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 teaspoon vanilla

Instructions

  1. Oil 13×9x2 pan, dust bottom and sides with powdered sugar
  2. In a large bowl, sprinkle gelatin over cold water, let stand to soften
  3. In saucepan, cook sugar, corn syrup, hot water, and salt over low heat, boil mixutre without stirring until 240 degrees, about 12 minutes
  4. Remove pan from heat, pour sugar mixture over gelatin mixture stir until gelatin is dissolved
  5. With mixer, beat mixture on high until white, thick and nearly tripled in volume, about 6 minutes
  6. In separate bowl, beat whites until they hold stiff peaks
  7. Beat whites and vanilla into sugar mixture until just combined
  8. Pour into pan, sift 1/4 cup powdered sugar over top
  9. Chill marshmallows, uncovered, until firm, at least 3 hours
  10. Run thin knife or spatula around edges, turn out, cut into cubes
  11. Sift remaining powdered sugar into bowl, toss marshmallows

Quick Notes

Marshmallows can be served immediately, best to keep in fridge a few more hours to get a bit more moisture out before allowing to sit at room temperature.
