Here is one of my favorite side dishes! Oven baked Greek potatoes.
Recipe: Oven Roasted Greek Potatoes
Summary: My favorite potatoes… Greek style!
Ingredients
- Potatoes
- Oregano
- Salt
- Pepper
- Olive Oil
Instructions
- Peel and dice the potatoes into about ½ inch cubes and place in a non-stick baking pan.
- Pour a generous amount of olive oil over all of the potatoes. Move them around to make sure they are well coated.
- Sprinkle oregano, salt and pepper over the potatoes.
- Preheat the oven to 425, then bake for a total of 35 minutes, turning the potatoes every 10-15 minutes to prevent sticking to the pan.
- If you like your potatoes extra crispy you can turn the oven to broil for the last 10 minutes and crank up the temp to about 500 degrees.
