Recipe: Popovers
Ingredients
- 2 cups milk
- 4 eggs, room temperature
- 2 cups flour (don’t sift!)
- 3/4 teaspoons salt
- approx. 1 cup grated cheese
Instructions
- Heat oven and popover pan to 450 degrees
- Warm milk on stove
- Whisk eggs, whisk in milk slowly (slow enough so you don’t cook the eggs)
- Mix salt and flour
- Combine wet and dry ingredients (only until there are small lumps left)
- Brush pan with melted butter
- Fill cups 3/4 full, top with cheese
- Bake 20 minutes at 450 degrees, then 20 minutes at 375 degrees
Quick Notes
Don’t open the over for at least the first 30 minutes
5 minutes before it’s done, split the top of the popovers to release steam
It’s important not to overdo any of the steps, as the batter does best if not handled too much
